Roast Chicken Love

Last night, our good friends Erica and Justin invited us over for Sunday dinner. It was a snowy, slushy day and the roads were questionable, but I’m so glad I braved the elements for this dinner. It was one of the most comforting, delicious meals I’ve had in a while.


Erica made her first whole roasted chicken! It was Giada’s recipe for Garlic-Roasted Chicken with Root Vegetables, and it was extraordinary. The chicken was tender and flavorful and the skin was crispy and golden brown, just like you would want. She served it with the delicious veggies from the bottom of the roasting pan, and a salad with homemade ranch dressing. If that’s not impressive, I don’t know what is! I am inspired to overcome my own fear of chicken cavities and give this meal a go.


We had a surprise treat for dessert. Erica ordered the tiniest, most adorable little cupcakes from Baked by Melissa. If you haven’t visited this web site, you must. Who could resist thimble-sized cupcakes in flavors like coffee caramel, wedding cake and cotton candy?
