We’re lucky to eat dinner together, no matter how modest or imperfect.
Do we always cook a homemade dinner? No, far from it. Sometimes it’s takeout from India Palace, or cheese and crackers (if you’re me), or a bacon sandwich (if you’re Mike). Do we always eat fresh, healthful meals full of vegetables? If the previous statement is any indication, signs point to no. Do we always sit down at the kitchen table? As much as I’d like that, sometimes it’s on the couch, and sometimes it’s just hovering over the kitchen island.
But most importantly, do we eat together?
Usually, yes. And it’s nice. Days like yesterday help me remember just how lucky we are to be able to do that.
Here’s what we had for dinner on Sunday – it actually was homemade and contained vegetables.
We made some Roasted Portobello Mushrooms seasoned with soy sauce and topped with some yummy blue cheese. We also made some Mediterranean Couscous that contained tomatoes, cucumbers, basil, lemon juice and olive oil – very fresh and tasty.
If this inspires you to want to make dinner, awesome. If not, that’s OK too. But do spend some time savoring the moment with those you love.
