Real Men Fry Latkes

Tonight, Mike and my dad donned head lamps and braved below freezing temperatures to fry latkes on the grill for our family Hanukkah party.

We use the grill method because my dad loves his Lodge cast iron skillet like a third child and jumps at the chance to use it. Also, my mom hates the smell of fried onions and potatoes that lingers in the house, and finds the process messy.

The potatoes were accompanied by Chicken Marbella, some Brussels sprouts with turkey bacon and Lemon Asparagus Risotto.

No Hanukkah party is complete without dessert, and we loved my Aunt Trish’s Simcha cake.

Gluten Free Latkes

8 lbs Russet Potatoes
4 small onions
2 cups Gluten Free Rice Flour
6 eggs – beaten
Kosher salt & pepper to taste

1. Peel and grate potatoes and onions in food processor
2. Mix with remaining ingredients
3. Form into ping pong sized balls and flatten in the cast iron skillet on the grill
4. Flip when golden brown
5. Serve warm with apple sauce, sour cream and sweet chili sauce
